This recipe was born out of desperation. Doughless, hungry, and too proud to order pizza delivery, I reached for a bag of instant yeast and crossed my fingers. This 30-minute weeknight pizza recipe is perfect for when life just doesn’t allow for you to do a nice, long ferment!
It also works great when you have more people show up for a pizza party than you planned for!

A “Cheater’s” Dough Recipe?
Well, I guess for me, really cheating would be ordering pizza from a big delivery chain!
Still, it’s been a while since I’ve made same-day pizza dough. While I pretty much experiment with every pizza I make, I pretty much always love that slow rise magic of a 24 hour fermented Neapolitan. But then one Thursday night, after a long day, no prep, and band starting in under an hour, I found myself wonderingโwhat if I “cheated”?
Turns out, cheating isnโt always bad. This 30-minute dough is soft, pliable, and – while not exactly flavorful – still a wonderful canvas. Is it going to win a Neapolitan championship? No. But itโll win dinner on a weeknight, and sometimes thatโs more important.
What Makes This a โCheaterโsโ Dough?
- Instant yeast (or rapid rise) means no blooming time
- Warm water and a slightly higher initial hydration kickstart fermentation
- A little sugar helps feed the yeast faster
- No bulk riseโwe go straight from mix to rest to shaping
You can make the dough, preheat your oven, prep toppings, and be eating pizza in under 30 minutes.
How Is Our 30-minute Weeknight Pizza Different?
Our “fast pizza dough” standard has been our Easy Peasy Pizza Dough recipe that Heather invented probably a dozen years ago. I’ve dabbled with it, trying it with a Biga starter, but fast pizzas haven’t been my focus.
And besides, this time I really didn’t even have time for that one (which is more like 45 minutes).
In particular, using Instant Yeast shaves at least 5 minutes off of the Easy Peasy recipe.
Quick Cheaterโs Pizza Dough (Makes 2x 12″ pizzas)
This 30-minute weeknight pizza recipe makes 2 dough balls. Make both tonight, or refrigerate the second one and it’ll be good for another couple of days (in fact better).

Ingredients
- 2ยผ tsp (1 packet) instant yeast
- 1 tsp sugar
- ยพ cup (180g) warm water (between 100ยฐF and 110ยฐF)
- 2 tbsp olive oil
- 1ยฝ tsp fine salt
- 2ยฝ cups all-purpose flour (or 00 if you prefer, but AP works great here)
Optional: ยผ tsp garlic powder or dried oregano for added flavor in the dough

Instructions
- Mix the Dough
In a medium bowl, whisk together the warm water, yeast, and sugar. Once mixed, add the olive oil and salt, then stir in the flour with a wooden spoon until a shaggy dough forms. - Knead (5 minutes)
Turn it out onto a floured surface and knead until smooth and elasticโabout 5 minutes. It should be slightly tacky but not sticky. Add a bit of flour if needed, but go easyโtoo much and it tightens up too quickly. - Quick Rest (8 minutes)
Cover with a damp towel or plastic wrap and let it rest while your oven and stone or steel preheat to 500ยฐF (or as hot as it will go). This short rest relaxes the gluten enough to shape. This is the time to get your toppings ready. - Shape
Divide into two balls. Shape with your hands or a rolling pin. It wonโt have the same extensibility as a 3-day dough, but itโll be plenty workable. - Place in Pan
Lightly oil your pizza pan and place the dough in it. Shape the dough to fit the pan. - Top the Pizza
Top with sauce, cheese, and your favorites (I’m partial to Canadian pizza for this). Avoid using ingredients that are very moist like fresh tomatoes. - Bake
Bake on a steel or stone for about 15 minutes until crust is puffed and golden and cheese is bubbling.
Tips to Make It Shine
- Preheat like you mean it: A blazing-hot stone or steel makes all the difference. Getting the oven on first is the most important step.
- Brush the edge of the crust with olive oil before baking for color and flavor.
- Keep it simple: Since the dough doesnโt have the flavor depth of a long ferment, toppings matter. A drizzle of garlic oil post-bake can go a long way.

- In a medium bowl, whisk together the warm water, yeast, and sugar. Add the olive oil and salt, then stir in the flour with a wooden spoon until a shaggy dough forms.
- Turn it out onto a floured surface and knead until smooth and elasticโabout 5 to 6 minutes. It should be slightly tacky but not sticky. Add a bit of flour if needed, but go easyโtoo much and it tightens up too quickly.
